To set up The Taverns of Tiefenthal, place the monastery board centrally with snap tokens and the turn marker at space one. Sort all tavern and guest cards into face-up piles by their front symbols, removing unused starter cards and specific guests for a two-player game. Each player takes a tavern board, matching monastery and safe markers, a beer coaster, four white dice, and three colored dice of their choice. Players assemble their tavern board with its ten equipment tiles and create a starting deck of seven regular visitors, one server, one table, and one brewer. The player last in a tavern receives the beer mug marker to indicate first player.

Scoring in The Taverns of Tiefenthal occurs at the end of the final round. Players count all victory point symbols located in the top left corner of every card in their entire deck, which includes their draw deck, hand, tavern tables, and discard pile. The player with the highest total wins. In the event of a tie, the tied player who has stored the most coins and beer wins; if still tied, victory is shared.

The game automatically ends after the completion of the eighth round. During the Closing Time phase of the eighth round, the round marker on the monastery track is checked.
